Rekha's Momo Recipe
For those volunteers that may have mislayed their copies of Rekha's (our cooking class teacher) Momo recipe, and for others that just want to try cooking a traditional Nepali dish:

Momo’s
There are no quantities in this
recipe because you can decide your preferred mix of vegetables, meat and
spices.
1. Finely chop cooked potatoes,
cabbage, onion, tomato and garlic. Mix in a bowl, if you would like meat momos
add ground or chopped meat in the mixture. [For easier preparation, chop the
ingredients in a mixer.]
2. Season the meat and vegetable mixture with masala spice,
chili powder, turmeric and a generous amount of salt.
3. Mix flour and water to create a dough. Kneed the dough
for approximately 10 minutes until it is soft, adding additional water and
flour as necessary. When the dough is nearly done, dip your fingers in oil two
to three times as you knead to put a small amount of oil in the dough. If you
are going to let the dough sit out, cover it with plastic wrap so it does not
dry out.
4. Roll out flat circles of dough approximately two to
three inches wide and fill with the meat and vegetable mixture.
5. In a double boiler, create a vegetable or chicken broth.
Store purchased broth will also work.
6. Place dumplings in the top of the double boiler, steam
for 15 to 20 minutes, if you like you can pour the broth over the momos and eat
the momos as a soup. Enjoy.
